Happy Christmas Eve Eve!
I’m so glad you all are enjoying my new recipe for vegan snickerdoodles, which are just in time for Christmas! I’ve had a few emails asking me how my Zumba class went monday and wait for it – it went great! :) I was a bit nervous to go into a new place and co-teach which is something I have never done. However I had the most fantastic experience. It was so great to be able to feed off of my instructor friends energy, and we both had a blast. Also I was able to try out some new choreography which was fun!
Latley I have been looking into getting a heart rate monitor so I can better attract the efficiency of my workouts. I have been looking at a few brands including Ekho, Sport Line, Acumen and Barska. For those of you who use a heart monitor, what brand do you use? Anyone have experience with any of these?

Another delicious eat I have eaten recently was a big ol bowl of steamed veggies, sun-dried tomatoes and then this..
The dairy free cheese that has been changing the world. In addition to being vegan it happens to be gluten-free and soy free. Oh and did I mention delicious? ;) Even the most basic bowl of veggies was turned into a YUM-O dinner after a sprinkling of Daiya, which I proceeded to melt on top.
I cannot believe that tomorrow is Christmas eve! I have a busy day ahead of me including making biscotti, decorating and some last-minute gifts to work on. I just love this time of the year so very much. Tis the season to be merry!
