First off I wanted to thank each and every single one of you for your congratulations on my one year vegan anniversary! It ment so much more to being that I was able to share it with all of you. :) My dear friend Miho sent me a wonderful little care package that included the sweetest letter, a pin and a pair of hand-made earrings. I tried the apricot variety of Suncakes companies Heart Thrive bars
With only a couple of ingredients…
Oats, apricots, brown rice syrup, brown rice flour. rice bran, natural fruit juice, soy protein concentrate, dried plums, orange peel and almond extract.
…they are super delicious! They had a subtle apricot flavor that wasnt over powering. The only thing I would have changed about this flavor was that it was a little dry and crumbly. Perhaps a touch more brown rice syrup or some agave.
So the verdict? Yes I enjoyed this flavor, but it needed some soymilk for dunking.
What is miso?
In case you have no idea (I know I wasnt to sure myself ;)) miso is a thick paste made from fermented soybeans and barley or rice malt. It is mainly used in Japanese cooking to make soups or sauces.
There are many variations of miso, which are basically all made from koji mixed with either rice, barley or soy beans. The ingredients are fermented and aged in wooden kegs. Some of the lighter sweet miso is aged for only a few months, while the darker miso may be aged for up to 2 years. Darker color misos are stronger and more pungent in flavor, they are generally better suited for heavy foods. Lighter colored misos are more delicate and are oftentimes more appropriate for soup, dressings and light sauces.
Miso is especially for the circulatory and digestive organs, and it is high in protein and Vitamin B12, zinc, and copper.
