Evening muffins!

First off I wanted to thank each and every single one of you for your congratulations on my one year vegan anniversary! It ment so much more to being that I was able to share it with all of you. :) My dear friend Miho sent me a wonderful little care package that included the sweetest letter, a pin and a pair of hand-made earrings. (Isnt she talented? Look she can sew too!)

I tried the apricot variety of Suncakes companies Heart Thrive bars

With only a couple of ingredients…

Oats, apricots, brown rice syrup, brown rice flour. rice bran, natural fruit juice, soy protein concentrate, dried plums, orange peel and almond extract.

…they are super delicious! They had a subtle apricot flavor that wasnt over powering. The only thing I would have changed about this flavor was that it was a little dry and crumbly. Perhaps a touch more brown rice syrup or some agave.

So the verdict? Yes I enjoyed this flavor, but it needed some soymilk for dunking.

In honor of round six of vegan thursday I made my first ever batch of miso soup using this.

What is miso?

In case you have no idea (I know I wasnt to sure myself ;)) miso is a thick paste made from fermented soybeans and barley or rice malt. It is mainly used in Japanese cooking to make soups or sauces.

There are many variations of miso, which are basically all made from koji mixed with either rice, barley or soy beans. The ingredients are fermented and aged in wooden kegs. Some of the lighter sweet miso is aged for only a few months, while the darker miso may be aged for up to 2 years. Darker color misos are stronger and more pungent in flavor, they are generally better suited for heavy foods. Lighter colored misos are more delicate and are oftentimes more appropriate for soup, dressings and light sauces.

Miso is especially for the circulatory and digestive organs, and it is high in protein and Vitamin B12, zinc, and copper.

    Those suncakes looks so good…which one’s your favorite flavor?

    Yeaaaaaaay!! You tried miso soup! Isn’t it good and warming? I love it! (have it everyday!) Good thing it has vitamin B12, because vegans can lack them! My favorite way to use miso is *deff* for miso soup, and sometimes, I like to use it as a dip for vegetables, or use it to make stir-fried veggies!

    I can’t wait to hear about the abs challenge! I’m actually really psyched to start, my abs are in dire need of some workage.

    Thanks for the info on miso! I’ve heard of it but never tried it or actually knew what it was.. haha.

  5. Yes! The ab challenge has almost begun! I went to this super awesome pilates class today – I loved it! :)

    I have never attempted miso soup. I have some dark miso that I need to use. Hmm…maybe I will search for a recipe.

    I love miso… it’s so good nutritionally and in term of taste. I always have a package in the fridge.

  8. Great vegan goodies- congrats again on the veganversary! I’ve never tried cooking with miso myself, but I’m obsessed with miso soup. So salty and comforting! Have a great Friday :)

  9. I’ve never had miso soup but I REALLY want to try it. It sounds totally delicious, light, and satisfying. I’m kind of new to miso, so the only way I’ve tried it so far is on nori rolls (veggies rolled up in nori wraps) and I really like it that way.

    That’s hilarious, my mom was actually talking about miso soup this morning :) I’ve never had it, but I really want to try making it. I’ll have to search around for some good recipes and give it a go!
